Quick and Easy Carrot and Coriander Soup:

  • 1 vegetable stock cube (made up with 1.5x water, I used Oxo)
  • 6 medium carrots, sliced
  • 1 small onion, finely chopped
  • 1 garlic clove, chopped
  • Fresh, chopped coriander (I used 9 sprigs, but add more or less depending on your preference)
  • 1 cal cooking spray, or just a little oil for frying
  1. Fry the onions and garlic until soft and golden, then add the carrots and about half the coriander. Add the stock and bring to the boil, then reduce the heat and cover. Cook for 20 minutes, or until the carrots are tender (it's quicker if you slice the carrots quite thinly)
  2. Tip everything into a food processor, add in the remaining coriander, and blitz until smooth. Alternatively, use a hand blender and just blitz it in the pan.
  3. Return everything to the pan, reheat and serve.
Nutritional info, per serving (recipe makes approx. 3 servings): 
70 calories, 0.4g fat, 15.2g carbohydrate, 0.1g saturated fat, 3.8g fibre, 6.7g sugar, 0.36g sodium

Sicilian Style Fish Stew: modified from a BBC Good Food recipe
  • 1/2 onion, finely chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, finely chopped
  • 1/2tsp chilli flakes (add more or less depending on preference)
  • 2 tomatoes, chopped
  • 75ml white wine
  • 1 vegetable stock cube (made up to 350ml)
  • 50g couscous
  • 250g white fish fillet
  • zest of 1/2 lemon
  • handful of fresh, chopped parsley
  • 1 cal cooking spray, or a little oil to fry
  1. Fry the onions, garlic, celery and chilli flakes in a little oil, until onions are soft and golden. Add the tomatoes and cook for another couple of minutes. Add the wine and stock and bring to the boil.
  2. Add the couscous to the pan, reduce heat to a simmer, then add the fish. Cover the pan and leave for 5-10 minutes, until the fish is cooked through
  3. Sprinkle over lemon zest and parsley to serve.
